Bee’s Knees

Ingredients
2 oz. Bluecoat American Dry Gin
3/4 oz. fresh lemon juice
3/4 oz. honey syrup*
Lemon for garnish
We know this drink is the Bee’s Knees because it’s been around since the Prohibition era.

While we’re not exactly sure who is responsible for this drink’s creation, the inclusion of honey was a smart one as it was used to mask the smell of what was known then as “bathtub gin” (the not-so-good stuff), making it difficult for police to trace alcohol. Nonetheless, its citrus notes and slightly sweet profile makes it the perfect backdrop for the Original American Dry Gin. (And we’ll let you get away with a lemon twist just this one time).

*For Honey Syrup:
Combine equal parts honey with equal parts boiling water. Stir to dissolve honey, then let cool completely.
Directions

STEP 1

Add ingredients into a shaker and shake vigorously for 10-15 seconds.

Strain into a chilled coupe glass.
